Litigant Foodies – Fast And Delicious Breakfast Snacks

Need some help getting breakfast ready in the morning for yourself or your kids? Check out some of our quick and delicious breakfast recipes.

Feel free to get creative once you start whipping up these recipes. Throw in your favourite ingredients, whether that be an extra handful of shredded cheddar, slices of ham, or chopped mushrooms, adjust it to yours and your child’s tastes!

1. Simple breakfast burrito wrap

This is a fun and easy way to start your morning. A simple burrito full of all your favourite breakfast items.

Serving: 2 people (adjust the amounts however you need).

Time: 10 minutes.

Basic Ingredients: 

  • 3 eggs
  • 4 bacon slices
  • 4 hashbrowns
  • 1 tortilla wrap
  • A teaspoon of oil
  • A pinch of salt
  • A pinch of pepper
  • 1 teaspoon of garlic powder
  • A knob of butter/splash of cream

Method:

  1. Beat 3 eggs into a bowl and pour it into a pan with a knob of butter and/or splash of cream. 
  2. Add seasonings such as pepper, salt and garlic powder once the eggs begin to set. 
  3. With a splash of oil, heat 4 bacon slices and 4 hashbrowns in another pan and whatever else you feel like throwing in. This could be an assortment of vegetables, avocado, onions, pinto beans, baked beans or whatever else you like. You can even throw in last night’s leftovers!
  4. Grab a tortilla wrap and lightly heat it on a pan to soften so it’s easier to fold into a burrito. 
  5. Begin to layer each ingredient onto the wrap, starting with your favourite condiments on the wrap – mayo, ketchup, or hot sauce, whatever you feel like.
  6. Add the eggs onto the wrap, then the rest of your cooked ingredients.
  7. To get the perfect burrito wrap, fold the top and bottom side of the wrap about an inch towards the middle of the wrap. Then fold the left side of the wrap over the contents of the wrap towards the right hand side and keep rolling.
  8. Enjoy!

2. Omelette

A satisfying, flavourful and tasty way to start the day. Omelettes are a quick option for those who want a filling breakfast before heading out the house.

Serving: 1 person (adjust the amounts however you need).

Time: 10 minutes.

Basic Ingredients: 

  • 3 eggs
  • A block of cheddar cheese
  • A teaspoon of oil 
  • A pinch of salt
  • A pinch of pepper
  • A teaspoon of garlic powder

Method:

1. Prepare your fillings beforehand – if you want to include some meat, such as ham, chicken or chorizo, cut it up and cook it in a pan with a splash of oil. Add some chopped onions or any other vegetables you like into the pan to cook.

Bonus tip – throw some garlic powder onto the vegetables to give them some extra flavour.

2. Beat 3 large eggs in a bowl. Once your fillings are ready, pour the egg mixture into the same pan. 

3. Add some salt, pepper, garlic powder and any other seasonings you like as the egg mixture cooks for a boost of flavour. Mix the seasonings in before leaving the eggs to sit over the heat.

4. Once one side has cooked, flip over or tip the egg mixture to the edges so it runs over onto the pan underneath. You can also add some cheese on top and flip the omelette in half.

5. After a few minutes, once the omelette is fully cooked, place it onto a plate and enjoy!

3. Avocado Toast

Something as simple as a toasted slice of bread with a tasty topping can be a great way to start the morning.

Serving: 1 person.

Time: 5 minutes.

Basic Ingredients: 

  • 1 slice of bread
  • ½ an avocado
  • A pinch of salt
  • A pinch of pepper
  • ½ a teaspoon of garlic powder

Method:

  1. Start by toasting a slice of white or brown bread. Use any type of bread you like.
  2. Cut the avocado in half with a knife and scoop out one side. 
  3. Using a fork, mash the avocado until it is smooth. Add a pinch of salt, pepper and garlic powder for flavour.
  4. Spread this evenly across the toast. For extra toppings, add some chopped and roasted tomatoes with some balsamic, or add an egg for extra protein. Fried, poached or boiled, whichever you fancy. 
  5. Enjoy!

4. Porridge

This seems like a typical boring breakfast option, but it’s fast and very easy to spruce up and adjust to your taste.

Serving: 1 person

Time: 5 minutes

Basic Ingredients: 

  • 70g of oats
  • 300ml of milk/water

Method: (Basic recipe)

  1. Pour 70g of oats into a pan followed by 300ml of milk. You can also substitute the milk with water if you prefer to.
  2. Heat the mixture on a medium heat and regularly mix the oats to prevent them from sticking to the pan. 
  3. Depending on how thick you would like the porridge to be, add splashes of milk or water at the end to loosen the mixture.

There are many things you can do to add extra flavour to the porridge. 

Add some of these into the mixture or on top – 

  • Golden syrup 
  • Peanut butter and cinnamon. 
  • Strawberry/raspberry/blueberry jam.
  • Coconut flakes, sugar, and cinnamon
  • Caramelised Bananas
  • Banana slices and raisins 
  • Walnuts, almonds, and cinnamon.

5. Cheesy Quesadillas

An easy, quick and definitely delicious recipe to treat yourself to in the morning. 

Serving: 1 people

Time: 10 minutes

Basic Ingredients: 

  • 1 tortilla wrap
  • A block of cheddar cheese

Extras: 

  • 100g of shredded chicken
  • 1 and ½ tablespoons of plain yoghurt 
  • A teaspoon of oil
  • A pinch of salt
  • A pinch of pepper
  • A teaspoon of garlic powder
  • ½ a teaspoon of paprika

Method:

  1. Grab a tortilla wrap and lightly heat it on a pan to soften it. Take it off the heat.
  2. Grate some cheese and sprinkle it liberally on the wrap. 
  3. (Step 3-5 are optional) If you have some leftover chicken, shred it and place it in a bowl.
  4. Add a tablespoon of yoghurt and sprinkle in a pinch of salt, pepper, garlic powder and paprika. 
  5. Add this mixture on half the wrap and close the wrap in half. 
  6. Pour a teaspoon of oil on the pan and put it on a medium heat. Place the folded wrap on the heated pan and flip it over after 3 minutes. 
  7. Once both sides are slightly crispy, remove from the pan and place it on a plate.
  8. Enjoy!
